Easy Jambalaya

Ingredients:

  • 8 ounces Smoked Kielbasa (on sale at Fligners… Cut into bite size slices)
  • 1-10 ounce can of chunk chicken breast (drained and flaked)
  • 1 Tbsp. Canola Oil
  • 1½ tsp. Cajun Seasoning
  • 1 Celery Stalk (diced)
  • 1 Bell Pepper (diced)
  • 1 Small Sweet Onion Diced
  • 1-16 ounce can of Chicken Broth
  • 1-16 ounce can of Diced Tomatoes
  • 2 Cups of Instant Brown Rice

In a large pot of water, boil the kielbasa about 8 minutes and drain. In another pot, heat the oil over a medium heat, add the kielbasa, celery, pepper and onion. Saute until the vegetables begin to soften, about 5 minutes. Stir in the chicken and Cajun seasoning. The pour the broth and tomatoes into the pot and bring it to a boil. Add the rice and stir until it returns to a boil. Reduce the heat and cover the pot and let it simmer for about five minutes. Remove the cover and stir until the rice has absorbed all the liquid and is tender. (feel free to experiment with other sausages or meats, even some seafood. Delish)
